Ingredients:

  • 1kg bone-in lamb shoulder or hogget
  • 2 tbsp olive oil
  • 5 garlic cloves, crushed
  • 1 tbsp fresh rosemary (or dried)
  • Salt and cracked black pepper
  • 200ml lamb stock or red wine

Method:

  1. Preheat oven to 160°C.
  2. Rub lamb with oil, garlic, rosemary, salt & pepper.
  3. Place in deep roasting tray, add stock or wine.
  4. Cover tightly with foil and roast for 3.5–4 hours until fall-apart tender.
  5. Rest for 15 mins before serving with mashed potatoes and green veg.
