Ingredients:

  • 1kg pork belly, skin on
  • 1 tbsp sea salt
  • 1 tsp olive oil
  • 1 tbsp fennel seeds (optional)
  • 2 cloves garlic
  • 1 sliced onion (for roasting base)

Method:

  1. Preheat oven to 230°C.
  2. Score pork skin, rub with olive oil & salt.
  3. Roast for 30 mins at high temp to blister skin.
  4. Lower to 150°C and cook for another 1.5–2 hrs over sliced onion.
  5. Rest 10 mins before slicing.

Serve with apple sauce and roasted root vegetables.
