Roast pork cooking time

For a boneless pork loin or shoulder joint, roast at 220°C (200°C fan) for 20-30 minutes to get the crackling going, then turn down to 180°C (160°C fan) and allow about 30-35 minutes per 500g. Pork is cooked when the juices run clear and the centre reaches 70°C on a meat thermometer. Rest for 15-20 minutes before carving.

What is the cooking time of pork joints by size?

As a guide after the first blast: a Pork Loin Joint 1kg needs roughly 1 hour 10 minutes in total, a Boneless Pork Shoulder 1.5kg about 1 hour 45 minutes (or 4-5 hours low and slow at 150°C for pulled pork), and the Boneless Pork Loin Joint 3kg about 3 hours 15 minutes. Always check with a thermometer.
