Picanha, bavette and flat iron sit in draft. They are not on the live counter, and we will not build a collection for SKUs we will not send. A draft product is not a steak you can put in the basket.
What we do send is on beef steaks: sirloin, rump, fillet and T-bone, in the pairs and family packs we actually cut. Ribeye has its own tray at ribeye steaks.
Those five cuts — sirloin, rump, fillet, T-bone, ribeye — are the live steak shop. When picanha is ACTIVE, that is a different job. Until then, do not wait on a bavette page. Order the steaks that leave this packing room.
