Pan method
Thaw overnight in the fridge if frozen. Pat very dry and season with salt, pepper, and a pinch of paprika or thyme. Get a heavy pan medium rather than smoking hot — drumsticks need time for the meat near the bone to cook through. Lay them in without crowding and brown on all sides for 3 to 4 minutes, then lower the heat, cover loosely, and cook another 15 to 20 minutes, turning now and then, until the thickest part hits 75°C and the juices run clear. Uncover for the last few minutes to re-crisp the skin. Rest three minutes. Do not crowd the pan; steam pale the skin. A splash of stock under the lid keeps them moist if your pan runs dry.

No pan: oven 200°C for 35 to 45 minutes, medium grill 10 to 14 minutes a side, or air fryer 190°C for 22 to 28 minutes flipping halfway. Browse chicken for drumsticks, thighs and wings when you are filling the freezer.
