Ingredients
- 400–800g extra lean diced beef (1–2 packs)
- 1 onion + 2 carrots + 1 celery stick, chopped
- 2 tbsp tomato puree; 1 tbsp flour
- 500ml beef stock; splash of Worcestershire
- 2 bay leaves; thyme; salt and pepper; 1 tbsp oil
- Mash or crusty bread to serve
Method
- Heat oil in a casserole. Brown the diced beef in batches; set aside.
- Soft veg in the same pot, stir in puree and flour, then stock and Worcestershire. Return beef with bay and thyme.
- Cover and simmer gently on the hob (or 160°C oven) for 1½–2 hours until the beef is tender and the gravy rich.
- Taste, season, and thicken further if needed. Rest 10 minutes before serving.
- Serve with mash or bread — leftovers freeze well for another night.
