Ingredients
- 6–8 pork sausages (about 350–700g pack)
- 2 onions, sliced; 2 garlic cloves; 2 carrots, chunked
- 1 tbsp oil; 1 tbsp plain flour; 1 tsp mustard
- 400ml beef or chicken stock; splash of Worcestershire sauce
- 1 tsp dried thyme; salt and pepper
- 1kg potatoes for mash; 50g butter; splash of milk
Method
- Heat oil in a casserole. Brown sausages all over, then lift out. Soften onions, garlic and carrot in the same pan.
- Stir in flour, then stock, mustard, Worcestershire and thyme. Nestle sausages back in.
- Cover and simmer gently 30–35 minutes (or oven 180°C fan) until sauce is rich and sausages are cooked through.
- Meanwhile boil potatoes, drain, and mash with butter and milk; season well.
- Serve sausages and gravy over mash — classic British sausage casserole with mash.
