This 500-600g t-bone steak is 21-day matured, with a tender fillet on one side and sirloin on the other. Named for the T-shaped bone, it is a thick, well-marbled cut for the grill or a hot pan.

Given the size of this steak we’d suggest searing over a high heat in a large pan before transferring to the oven to finish. It’s nice and thick so season it well with salt and coarsely ground pepper beforehand. Cook to your preferred liking, just make sure you allow this beauty to rest before digging in.
