How long to cook a beef joint
Weigh the joint, then start it at 220°C (200°C fan) for 20 minutes and turn down to 180°C (160°C fan). After that, allow per 500g: rare about 15-20 minutes, medium about 20-25 minutes, well done about 25-30 minutes. Rest for at least 20 minutes, loosely covered, before carving.
Beef cooking times by joint
As a guide for medium: Topside Joint 1kg about 1 hour 10 minutes in total; Sirloin Joint 1kg about 1 hour; Sirloin Joint 2-2.2kg (defrost fully first) about 1 hour 50 minutes; whole beef fillet just 25-35 minutes at 200°C after searing. Brisket is different: cook it low and slow, around 3½-4 hours at 150°C. A meat thermometer takes out the guesswork: 50°C rare, 55-60°C medium, 70°C well done.
