Boneless Leg of Lamb Roast Recipe with Garlic, Rosemary & Lemon

Ingredients:

  • 1 Whole Boneless Leg of Lamb (approx. 2kg)
  • 4 garlic cloves, sliced
  • 2 tbsp fresh rosemary, chopped
  • Zest and juice of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1 tbsp Dijon mustard

Instructions:

  • Preheat oven to 180°C (160°C fan) or 350°F.
  • Prepare the lamb: Pat the lamb dry. Using a sharp knife, make small slits all over the surface. Insert slices of garlic into the slits.
  • Make the marinade: In a bowl, mix olive oil, rosemary, lemon zest and juice, salt, pepper, and mustard (if using).
  • Rub and rest: Rub the marinade all over the lamb. Let it rest at room temperature for 30 minutes to absorb the flavours.
  • Roast: Place in a roasting tray and cook for: 1 hour 20 minutes for medium-rare1 hour 35 minutes for medium1 hour 50 minutes for well done
  • 1 hour 20 minutes for medium-rare
  • 1 hour 35 minutes for medium
  • 1 hour 50 minutes for well done
  • Rest before carving: Remove from oven, cover loosely with foil, and rest for 15–20 minutes before slicing.
