More about Sirloin Steaks
Sirloin steak is tender with a strip of fat for flavour, the all-rounder of the steak counter. Buy Sirloin Steak 2x 6oz or 2x 8oz for two, the Caveman Sirloin Steak 16oz or XL 20oz Dinner Plate for a big night, or the Sirloin Steak 10x 6oz for the freezer. Every pack shows its price per kg.
How to prepare and cook sirloin steak
- Take the steaks out of the fridge 20–30 minutes before cooking so they are not fridge-cold.
- Pat them dry, oil them lightly and season with salt and pepper just before they go in the pan.
- Get a heavy pan, cast iron or thick stainless steel, ripping hot. Lay the steaks in without crowding them.
- Cook a 6oz sirloin for about 2–3 minutes a side for medium-rare, turning once; an 8oz needs a touch longer. Stand it on its fat edge for 30 seconds so the fat renders.
- In the last minute, add a knob of butter, a crushed garlic clove and some thyme, and spoon it over.
- Rest the steak on a warm plate for 3–5 minutes before serving.
With a thermometer, aim for 52–54°C in the centre for medium-rare and 57–60°C for medium. No pan? Try sirloin in the air fryer or under the grill, or follow our step-by-step pan-fried sirloin steak guide.

The Sirloin Joint 1kg feeds four, and bigger joints are on our sirloin joints page. Roast at 220°C for 20 minutes, then at 180°C for 35–40 minutes per kg for medium-rare.
