More about Rump Steaks
Rump steak is the butcher's pick for flavour: firmer than sirloin and full of beefiness. Buy Rump Steak 2x 6oz for two, 8x and 10x 6oz packs for the freezer, the Big Daddy Rump Steak 16oz for one big appetite or THE BEAST 42oz to share. Each pack shows its price per kg.
What is rump steak?
Rump steak is cut from the rump, at the back end of the sirloin. It is a working muscle, so a rump steak is a little firmer than sirloin or fillet, but it has more beefy flavour and costs less, which is why it is the butcher's pick for flavour. It is lean with a thin edge of fat, and it loves a hot pan.
How to prepare and cook rump steak
- Take the steaks out of the fridge 20 minutes before cooking.
- Pat them dry, oil them and salt them just before they hit the pan.
- Get a heavy pan ripping hot and cook a 6oz rump steak for about 2–3 minutes a side for medium-rare, flipping once.
- Rest it for five minutes. Rump is a working muscle and rewards the rest more than fillet does.
- Slice it across the grain to serve.
With a probe, aim for 52–54°C for medium-rare and 57–60°C for medium. No pan? A hot grill takes 3–4 minutes a side, or the air fryer 8–11 minutes at 200°C. For the big ones, see how to cook the Big Daddy rump steak. For stir-fries, fajitas and stroganoff, the Extra Lean Rump Steak Strips 400g come ready-sliced.
