Ingredients
- 700g pork belly slices
- 1 tbsp oil; salt; 1 tsp fennel seeds or sage (optional)
- Apple sauce: 2 cooking apples, peeled and diced; 1 tsp sugar; splash of water
- Mash or roast potatoes and greens to serve
Method
- Heat oven to 200°C fan. Pat belly dry; score the fat if needed. Rub with oil and salt (and fennel if using).
- Roast on a rack or tray 35–45 minutes, turning once, until fat is crisp and meat is cooked through.
- Meanwhile simmer apples with sugar and water until soft; mash for a quick apple sauce.
- Rest belly 5 minutes. Serve with mash, greens and apple sauce.
