Ingredients
- 1 rack BBQ pork ribs (about 1.1–1.4kg)
- Extra glaze: 2 tbsp ketchup, 1 tbsp honey or brown sugar, 1 tsp smoked paprika, splash of cider vinegar
- Salt and black pepper
- Coleslaw and chips or corn on the cob to serve
Method
- Heat oven to 150°C fan. Season ribs lightly. Wrap loosely in foil on a tray.
- Roast 2–2½ hours until tender (meat pulls from the bone).
- Mix ketchup, honey, paprika and vinegar. Unwrap ribs, brush with glaze, raise oven to 200°C fan.
- Roast uncovered 15–20 minutes, basting once, until sticky and caramelised.
- Rest 5 minutes, slice into ribs and serve sticky glazed BBQ pork ribs — proper British BBQ tray.
