Thaw fully and bring to cool room temperature. Pat dry and season with salt and pepper — fillet needs restraint, not a heavy rub. Preheat the BBQ to a hot searing zone with a cooler side. Because fillet is lean, oil the steaks lightly so they do not stick. Sear 2 minutes a side for a 6oz steak, then shift to the cooler zone to finish — aim for about 52°C rare or 57°C medium-rare; past medium the centre dries. Rest five minutes under loose foil. Do not walk away; fillet cooks fast. A quick butter baste off the heat with garlic and thyme in a small pan keeps it juicy. Whole fillet can be seared hard then roasted over indirect heat until the thickest point hits your target, then rested 15 minutes before carving. Slice across the grain for soft plates.

No BBQ: hot cast iron 2 minutes a side with butter baste, oven 180°C for 6 to 10 minutes after a sear, or air fryer 200°C for 7 to 11 minutes flipping halfway. Browse fillet steaks and beef steaks for sirloin and rump when the table wants a mix.

What to serve
