Thaw fully in the fridge if frozen and bring the steaks out 20 to 30 minutes before cooking so they are not fridge-cold. Pat very dry and season generously with salt and pepper. Preheat the BBQ to a hot searing zone (around 250°C+) with a cooler side beside it. Oil the bars lightly, then sear 2 to 3 minutes a side for a deep crust, flipping once. Stand the steak on the fat edge for 30 to 60 seconds to render the cap. Move to the cooler zone if the fat flares, and finish to your preferred doneness — about 52°C for rare, 57°C for medium-rare, 63°C for medium at the thickest point. Rest five minutes under loose foil. Do not drown sirloin in sweet sauce; a light glaze only in the last minute if you must. Keep a spray bottle of water for flare-ups rather than flipping constantly. Wipe sticky marinade off the bars between steaks so the next crust stays clean.
