A 6oz sirloin is a habit. A T-bone or a tomahawk is a decision. T-Bone Steak 16oz is two muscles on a bone: strip and a bit of fillet. Tomahawk Steak 900g-1.2kg (Frozen) is a bone-in rib steak with theatre. T-bone steaks and tomahawk steaks are not “a bit more steak”. They cook differently, they rest longer, and they look like you intended a night.

T-bone
The two muscles finish at slightly different speeds. A hot pan or grill, render the fat, probe the strip side, rest 8 minutes. The fillet side will be a little more done or a little less depending on thickness; that is the T-bone bargain. It is a two-person share or one very hungry person. It is not four polite slices for a dinner party unless the party is honest.
Tomahawk
This is a reverse-sear or two-zone BBQ cut. Sear, then indirect heat, probe 52°C for medium-rare after rest, rest 10 minutes, slice off the bone. Frozen tomahawk needs a full fridge thaw, 24 hours or more. Shop the big steaks when the night is the point. Shop a 2x ribeye when you want ribeye flavour without the handle.
We already have a tomahawk cook story on the news blog from years ago. This is the buying-and-occasion note: do not order one because a thumbnail looked like a castle. Order one because two or three people will sit down and eat it. Leftover tomahawk, sliced cold, is excellent. Leftover tomahawk, ignored, is an expensive lesson.
Kit
A probe, a board, a sharp knife, tongs. Not an air fryer, unless you enjoy comedy. Not a tiny pan. If your kit is a small frying pan, stay with 6oz steaks and have a better night than a smoky failure with a long bone hanging off the rim.
Occasion steaks are allowed. They are just not Tuesday. Buy them with a date in mind, thaw them in time, rest them like you mean it. The bone is flavour and a handle, not a substitute for a method. When the night is ordinary, the 6oz pack is still the grown-up buy.
Keep a cheap probe in the drawer and use it once so you stop guessing. A rest on a warm plate does more for juice than another five minutes of heat. Buy the pack again only if this one left the freezer as dinners, not as a frozen brick with a good name. That is as true of T-Bone and Tomahawk for Occasion Nights as of any other pack we send out of the cutting room. Cook it like the cut it is, and it will earn the next click.
