Quick answer: Lamb chops are cut from the loin (loin chops), the rib (cutlets, which make a rack when left joined) or across the saddle (Barnsley chops). Pan-fry or grill them hot for 3–4 minutes a side for pink. We don't sell chops or racks right now; our closest lamb cuts are below.
Closest cuts we stock
We don't sell lamb chops and rack of lamb at the moment. These are the closest cuts we do stock:
Types of lamb chop
- Cutlets: single rib bones from the best end; a whole rack is 6–8 cutlets joined.
- Loin chops: the T-shaped chop from the loin.
- Barnsley chop: a double loin chop cut across the saddle.
- Chump chops: from the rump end, meatier and cheaper.
How to cook lamb chops
Bring to room temperature, season, and cook in a very hot pan or under a hot grill for 3–4 minutes a side for pink (about 60°C in the middle), then rest for 5 minutes. Roast a rack at 220°C for 15–20 minutes after searing the fat.

Frequently asked questions
Do you sell lamb chops?
Not at the moment. We stock lamb shanks, hogget shoulder chunks and leg of lamb; see the lamb range for what is in stock today.
How long do you cook lamb chops?
About 3–4 minutes each side in a hot pan for pink, 5 minutes a side for well done; rest for 5 minutes.
What is the difference between lamb cutlets and chops?
Cutlets come from the rib (a rack cut into single bones); chops usually means loin or chump chops, which are thicker and meatier.
