Slow-cooker beef stew with diced beef is the set-and-forget supper British kitchens were made for. Ingredients
- 400–800g diced beef (1–2 packs)
- 1 onion, chunked
- 2 carrots + 2 celery sticks, chunked
- 2 tbsp plain flour
- 500ml beef stock
- 1 tbsp tomato puree
- 1 bay leaf + thyme
- 1 tbsp Worcestershire sauce
- Salt and pepper
Method
- Toss the diced beef in seasoned flour. Brown in a hot pan on the hob in batches (worth the extra pan).
- Tip beef and veg into the slow cooker. Add stock, puree, Worcestershire, bay and thyme.
- Cook on low 7–8 hours or high 4–5 hours until the beef is tender.
- Taste, season, and thicken with a cornflour slurry on high for 15 minutes if you want a thicker gravy.
- Serve with mash or crusty bread. Leftovers freeze well.
