Oven and grill
The marinade already carries oil and spice — no extra oil needed. Oven: 200°C for 18 to 22 minutes until 75°C in the thickest part. Grill: medium-high, 6 to 8 minutes a side, watch the sugars in the marinade so they colour without burning. Rest three minutes. If the glaze darkens early, drop the rack one level or tent loosely for the last few minutes.
Air fryer and pan
Air fryer: 180°C for 14 to 18 minutes, turn once, probe to 75°C. Pan: medium heat so the marinade does not scorch — 5 to 7 minutes a side. Serve with rice, slaw, and a cooling yoghurt if the heat builds. Pair with other BBQ packs from BBQ meat when you are feeding a mixed grill night.
What to serve
