Frozen vs Fresh Meat: What You Are Buying

Customers ask if frozen meat is the cheap leftover of the fresh counter. In our packing room it is often the same cut, frozen at the right moment so you can shop once and cook for a fortnight. The choice is not quality versus rubbish. It is whether you will cook it this week, and whether you want a small fresh pack or a freezer bag that earns its space. Previously frozen and frozen chicken sit alongside fresh packs for that reason.

What frozen does well

5kg Frozen Chicken Breast Fillets is a freezer job: five kilos of fillets you will not finish by Thursday. Sirloin Steaks Frozen Pack (1.8–2.2kg) is the same idea for steak night. Frozen lamb chops, drums and pork chops behave if you defrost them in the fridge, not in the sink. Ice crystals in a badly frozen steak can wet the surface and kill the crust; a properly frozen steak, dried after thawing, still takes a hot pan. That is why we sell both frozen steaks and fresh 2x packs.

Fresh is the right buy when the meal is named. Two people, tonight, sirloin: a 2x 6oz or 2x 8oz pack. A Sunday topside. A gammon you will glaze this weekend. Fresh packs are smaller, easier to portion, and you are not waiting on a defrost. They cost more per kilo because you are buying convenience and a short cook window, not because the frozen bag is a different animal.

How to shop the mix

Fill the freezer with the cuts you cook on autopilot: chicken breast, mince, sausages, a bulk steak pack. Keep one or two fresh packs for the meals you care about this week. Defrost on a tray in the fridge, 24 hours for steaks and chops, longer for a thick joint. Never cook a thick steak from frozen if you want an even centre; thin items such as some burgers can go from frozen with more time. Buy frozen when the calendar is busy. Buy fresh when supper is already decided.

Labels and the fridge

Fresh packs want using in the days on the label. Frozen packs want a cold freezer, not a door shelf that thaws and refreezes every time you hunt for peas. If a frozen bag has been sitting open, cook that meat first. A fresh 2x steak pack and a frozen bulk bag can live in the same order: one for this week, one for next. That mix is how a butcher’s household actually shops, and it is how you stop treating frozen as second-class and fresh as a panic buy.
