British Butcher Cuts: What to Buy and Why

A British butcher does not sell “protein”. We sell cuts, and the cut tells you the cooking. If you want a roast, you buy a joint. If you want ten minutes in a pan, you buy a steak or a chop. That is the whole skill, and it is how the counters are laid out at Meatsupermarket.com: beef, lamb and pork.

Beef: mince, joint, steak

Lean Beef Mince 400g is the weekday cut. One pack is a Bolognese or chilli for two to three; buy more than one if you batch-cook. It is not a steak and it will not behave like one. Start in the beef collection, add a lamb roast or chops if they are on the menu, and finish with pork steaks or a joint so the order is a week of proper butcher’s meat, not a random mix.
