How to Cook Beef Brisket

Brisket is chest muscle. Treat it like a steak and it will fight you. Treat it like a pot roast and it becomes the Sunday beef people remember. Brisket Joint 1kg is a 1kg joint for a small table. Flat Brisket 1.5kg is the bigger flat. Both live in brisket and in slow cooker meat.

Pot-roast brisket in the oven

Season, brown all sides in a casserole, 3 minutes a side. Add onion, a little tomato puree, stock or beer to come a third of the way up, lid on, 150°C for 4 hours on the 1kg joint, 4 hours 30 minutes to 5 hours on the 1.5kg flat. You want a skewer to slide in with little fight, around 90°C if you are probing. Rest in the liquor 20 minutes, then slice across the grain — the same rule as rump, even more important here. If you want it pulled for buns, give it another 30 to 45 minutes and shred. The difference between “sliceable pot roast” and “pulled brisket” is that last half hour, not a different cut.

Slow cooker

Same brown, then low for 8 to 9 hours. Brisket in a slow cooker can go watery if you add too much stock; a cup is enough because the meat makes its own juice. Reduce the liquor on the hob to a gravy. Beef Chuck 1.5kg is the sister cut if brisket is out of stock: same times, a slightly more pudding-like shred, excellent in stewing beef recipes.

What not to do

Do not blast brisket at 200°C like a topside. Do not slice it with the grain. Do not serve it the minute it leaves the pot; the rest is when the juice goes back into the meat. Leftovers fry up for hash, or sit in buns with pickles. A 1kg joint is four to five plates with potatoes; the 1.5kg flat is a proper table plus lunch. Shop beef joints if you want a topside or sirloin roast instead — those are dry roasts, not this wet cook.

A 1kg brisket is a week-night-of-the-weekend cook: brown after work, oven at 150°C, and it is ready when you have done everything else. The 1.5kg flat is a Sunday. Either way, the grain in brisket runs in a way that punishes lazy slicing — look twice before you carve.

Brown, lid on, low and long, slice across the grain. That is brisket, and it is worth the afternoon.
