Pan method

Pat the dice dry — wet meat steams grey. Season with salt and pepper. Heat a heavy pan or casserole until hot, add a splash of oil, and brown the beef in batches with space between cubes so they sear rather than boil. Tip out, soften onions and garlic in the same pan, then return the beef with stock, a bay leaf, and a spoon of tomato puree or mustard.
