How to Cook Lamb Chumps

A lamb chump is a boneless steak from the rump end of the lamb. It has more flavour than a loin chop and a little more chew if you rush it. Treat it like a small rump steak: hot pan, rest, slice across the grain. Lamb Chumps-Boneless 4x 325-350g is four 325–350g chumps, which is four plates or two generous ones. They live in lamb chumps and lamb steaks.

Pan-fried chump

Dry, salt, medium-high pan. 4 to 5 minutes first side, 4 minutes second side for a 325–350g chump to medium-pink. Rest 6 minutes. Probe 58–60°C. Slice across the grain the same way you would a beef rump; you will see the fibres. A knob of butter and a bit of rosemary in the last minute is enough. Four chumps will not fit in one domestic pan without steaming — cook two and two, keep the first pair loosely tented. Oven, BBQ and air fryer

Oven: sear then 180°C for 10 to 12 minutes. BBQ: 4 to 5 minutes a side over medium-direct. Air fryer: 200°C for 12 to 14 minutes, turning once. Chumps are thick enough that an air fryer works if you probe; they are not so thick they need a reverse sear unless you like the ritual. Shop lamb if you are adding chops or a shoulder for a second meal, and minted lamb chops if someone at the table wants mint already on.

Portions and leftovers

A 325–350g chump is a proper plate, not a nibble. Four in a pack is a family grill or two dinners for two; freeze the pair you will not cook tonight, separated. Cold sliced chump is a salad protein. Do not stew chumps; that is shoulder’s job. Do not cook them to 70°C unless you like them dry — they are a steak, not a drumstick. Rest is when a chump goes from tight to tender; skip it and you will blame the cut.

Four 325–350g chumps are a family grill if you do potatoes and a vegetable, or two nights for two if you freeze a pair. They are one of the better lamb buys per plate because there is no bone to pay for, but they still need the rest that a bone-in chop gets. Skip the rest and you will call them chewy.

Hot pan, pink centre, slice across the grain. That is a boneless lamb chump, and it is the lamb steak hiding behind the better-known chops.
