How to Cook Sweet Chilli Pork Plate Steaks

0 comments  •   2 minute read

Plate steaks are a different shape to a neat loin steak: a wider, thinner piece that takes a glaze well and overcooks if you treat them like a chop. Sweet Chilli & Lime Pork Plate Steaks - 300-400g sits in sweet chilli meat and pork plate steaks. The sweet chilli wants heat, but sugar burns. That is the whole method in one warning.

Pan, grill, air fryer

Pan: medium-high, 3 minutes first side, 2 to 3 second side, 71°C, rest 4 minutes. If the glaze is catching too fast, drop the heat; pale and flabby is the other failure, so do not go timid either. Grill: same times, watch the sugar. Air fryer: 190°C, 8 to 10 minutes, turn once. A ripping 200°C basket is how you serve bitter chilli instead of supper.

One 300–400g pack is a supper for two with rice, or a hungry one. Shop the Thai and BBQ plate steaks if you want a different glaze in the same shape. Shop pork loin steaks if you wanted a thicker, plainer steak and a sauce of your own. Do not mix glazes in one pan; you will make brown confusion.

What to serve

Rice, cucumber, a bit of lime if you have it. They are already sweet; you do not need a second sticky sauce. Leftovers slice into a wrap the next day. Reheat in a pan with a spoon of water, not another glaze blast. If you wanted heat more than sweet, the piri-piri pork packs are the better shop, and the plate steak can wait for a different night.

From fridge-cold

Ten minutes on the counter is enough for a thin plate steak. From frozen, thaw first. A glazed steak cooked from frozen burns the outside and leaves a cold stripe. This is a week-night cut because it is thin, not because it is magic. Pull it on time and it stays juicy. Leave it “to caramelise a bit more” and you are eating candy with pork fibres.

If the pack looks wet, pat it dry even though it is glazed. Surface water is steam, and steam is the enemy of the catch you wanted. Then leave the steaks alone in the pan; fidgeting is how glaze rips off and sticks to the metal instead of the meat. Medium-high, rest, rice. That is the cook.

Match the pan to the pack: a wide pan for many pieces, a small pan for two steaks. Crowding is the quiet way to steam meat you paid to fry. Give it space, give it a rest, and the cook you meant will show up on the plate. That is as true of How to Cook Sweet Chilli Pork Plate Steaks as of any other pack we send out of the cutting room. Cook it like the cut it is, and it will earn the next click.
