Ingredients
- 454g unsmoked back bacon, chopped
- 600g potatoes, diced small; 1 onion, sliced; 1 tbsp oil
- Optional: leftover cabbage or kale; 2 eggs; black pepper
- Butter for frying; parsley to finish
Method
- Boil diced potatoes 8–10 minutes until just tender; drain well.
- Fry bacon in a little oil until crisp; lift out. Soften onion in the bacon fat, then add potatoes and butter. Fry until golden and crispy at the edges.
- Stir bacon back through (and cabbage if using). Season with pepper.
- Fry eggs sunny-side if serving breakfast-style.
