Ingredients
- 4 pork loin steaks (about 135g each)
- 1 tbsp oil; salt and pepper
- Glaze: 2 tbsp honey, 1½ tbsp wholegrain mustard, 1 tsp Dijon, splash of cider vinegar
- Mash: 800g potatoes, butter, splash of milk; greens to serve
Method
- Boil potatoes for mash; drain and mash with butter and milk. Keep warm.
- Season pork. Heat oil in a pan and fry steaks 3–4 minutes per side until cooked through (75°C).
- Mix honey, mustards and vinegar. Spoon into the pan; bubble 1–2 minutes until sticky and coating the pork.
- Rest steaks 2 minutes. Serve with mash and greens, spooning over leftover glaze.
