Ingredients
- 1 rack large pork ribs (about 1.1–1.4kg)
- Dry rub: 1 tbsp brown sugar, 1 tsp smoked paprika, 1 tsp garlic powder, salt and pepper
- Sticky glaze: 3 tbsp BBQ sauce or tomato ketchup, 1 tbsp honey or brown sugar, 1 tsp Worcester sauce, splash of cider vinegar
- Coleslaw and chips to serve
Method
- Pat ribs dry; rub with spice mix. Wrap in foil.
- Oven: roast at 150°C fan for 2–2½ hours until tender. BBQ: cook over indirect heat similarly, or finish on the grill after oven.
- Mix glaze. Unwrap ribs; brush generously. Grill or roast hot (200°C) 10–15 minutes, basting once, until sticky and charred at the edges.
- Rest 5 minutes; slice between bones.
- Serve BBQ pork ribs with sticky glaze, coleslaw and chips — proper British BBQ meal.
