An easy cottage pie with lean beef mince is the midweek supper that still feels like a proper British dinner. Ingredients
- 400g lean beef mince (1 pack)
- 1 onion, diced
- 1 carrot, diced
- 1 tbsp tomato puree
- 250ml beef stock
- 1 tsp Worcestershire sauce
- 800g floury potatoes, peeled
- 40g butter + a splash of milk
- Salt and black pepper
Method
- Heat a splash of oil in a wide pan on the hob. Soften the onion and carrot for 5 minutes.
- Add the lean beef mince, break it up, and brown well — do not stew it grey.
- Stir in tomato puree, stock and Worcestershire. Simmer 15–20 minutes until rich and thick. Season.
- Boil potatoes until soft, drain, mash with butter and milk, season well.
- Spoon mince into a baking dish, top with mash, rough up with a fork.
- Bake at 200°C (fan 180°C) for 25–30 minutes until golden. Rest 5 minutes before serving.
