Ingredients
- 2 × 8oz gammon steaks
- A little oil or butter
- 2–4 eggs
- Oven chips or 500g potatoes for chips
- Optional: pineapple ring, mustard, or a drizzle of honey
- Peas or beans to serve; black pepper
Method
- Cook chips first — oven chips at the pack temperature, or hand-cut chips at 220°C (fan 200°C) until golden.
- Pat gammon dry. Heat a grill to medium-high or a pan on the hob. Lightly oil the steaks.
- Cook 4–6 minutes a side until the fat is rendered and the thickest part is hot through (about 75°C). Rest 2 minutes.
- Fry eggs in a little butter until the whites set and yolks stay soft.
- Plate gammon with chips and eggs. Add mustard or a honey glaze if you like it sticky.
