Ingredients
- 1.3–1.7kg short beef ribs
- 1 onion + 2 carrots, chopped
- 2 garlic cloves, crushed
- 2 tbsp tomato puree
- 250ml beef stock + 150ml red wine or extra stock
- 1 tbsp Worcestershire sauce
- 2 bay leaves + thyme
- Salt and black pepper
- Mash: 1kg potatoes, butter, warm milk
Method
- Season ribs well. Brown in batches in a hot pan with oil until deep brown on all sides — this builds the gravy flavour.
- Soft onion and carrot in the same pan, stir in puree and garlic for 1 minute, then deglaze with wine/stock.
- Tip veg and liquid into the slow cooker. Nestle ribs in, add Worcestershire, bay and thyme. Liquid should come part-way up the ribs.
- Cook on low 7–8 hours (or high 4–5) until the meat is falling from the bone. Skim fat if needed; thicken juices on the hob if you want a richer gravy.
- Meanwhile boil potatoes, mash with butter and milk, season. Serve ribs over mash with plenty of gravy.
