Ingredients
- 400–800g lean beef mince
- 1 onion, 1 carrot, 1 celery stick — finely chopped; 2 garlic cloves
- 1 tbsp oil; 1 tbsp tomato puree; 400g tin chopped tomatoes; 150ml beef stock or red wine; 1 tsp dried oregano; bay leaf; salt and pepper
- 300g spaghetti; grated cheddar or Parmesan to serve
Method
- Heat oil; soften onion, carrot and celery 8 minutes. Add garlic, then mince; brown well, breaking up lumps.
- Stir in puree for 1 minute. Add tomatoes, stock or wine, oregano and bay. Simmer gently 35–45 minutes until thick and rich. Season.
- Boil spaghetti until al dente. Drain.
- Spoon bolognese over spaghetti; finish with cheese.
