Thaw fully in the fridge if frozen and bring the steaks out 20 to 30 minutes before cooking so they are not fridge-cold. Pat very dry and season generously with salt and pepper — ribeye needs little more. Preheat the BBQ to a hot searing zone (around 250°C+) with a cooler side beside it. Oil the bars lightly, then sear 2 to 3 minutes a side for a deep crust, flipping once. Move to the cooler zone if the fat flares, and finish to your preferred doneness — about 52°C for rare, 57°C for medium-rare, 63°C for medium at the thickest point. Rest five minutes under loose foil. Do not drown ribeye in sweet sauce; brush a light glaze only in the last minute if you must. Trim only thick hard fat caps if they will not render; the marbling is the point. Keep a spray bottle of water for flare-ups rather than flipping constantly.
