Hot wings are the ultimate sharing food: crisp, sticky chicken wings tossed in a buttery, tangy hot sauce, with a pile of fries and something cool to dip. You don't need a deep fryer. The oven or air fryer gets wings properly crispy with one simple trick. Here's how to make hot wings at home, with our hot sauce, timings and a blue cheese dip.

Which wings?

Both are sent frozen; thaw them fully in the fridge first. Allow about 250–300g of wings per person as a main.

How to joint a chicken wing

A whole wing has three parts: the drumette, the flat, and the tip. Bend the wing at each joint and cut through the cartilage with a sharp knife. Keep the drumettes and flats for hot wings; freeze the tips for stock.

Ingredients

  • 1kg chicken wings (jointed) or flats
  • 1 tbsp baking powder (not bicarbonate of soda)
  • 1 tsp salt
  • 1 tsp garlic granules
  • ½ tsp smoked paprika

Hot sauce - 60g butter - 80ml hot pepper sauce (a vinegar-based cayenne sauce) - 1 tbsp honey (optional) - A squeeze of lemon

To serve - 600g frozen fries or homemade chips - Celery and carrot sticks - Blue cheese or ranch dip (below)

The secret: baking powder

Pat the wings completely dry, then toss them with the baking powder, salt, garlic and paprika. The baking powder raises the pH of the skin, which helps it dry, blister and crisp up in the oven like it's been fried. Use baking powder, not bicarbonate of soda, which tastes soapy. If you have time, leave the coated wings uncovered on a rack in the fridge for a few hours.

Oven method

  1. Heat the oven to 220°C (200°C fan, gas 7).
  2. Lay the wings on a wire rack over a lined baking tray, skin-side up, with space between them.
  3. Bake for 40–50 minutes, turning halfway, until deep golden and crisp.
  4. Meanwhile, cook the fries in the same oven, according to the pack.

Air fryer method

Cook at 200°C for 20–25 minutes, shaking the basket every 8 minutes, in a single layer (cook in batches if needed). See chicken wings in the air fryer.

Wings must be cooked through: steaming hot, no pink meat, clear juices (FSA guidance). They're at their best at around 80°C+, when the skin is crisp and the meat pulls from the bone.

Make the hot sauce

Melt the butter in a small pan, then whisk in the hot sauce, honey and lemon. Keep it warm. Toss the hot, crispy wings in a big bowl with the sauce just before serving, so they stay crisp.

Heat levels - Mild: equal parts butter and hot sauce, plus honey. - Medium: the recipe above. - Hot: add a pinch of cayenne or a dash of extra-hot chilli sauce.

Blue cheese dip

Mix 100g crumbled blue cheese, 4 tbsp soured cream, 2 tbsp mayonnaise, a squeeze of lemon and black pepper. Chill until needed. For ranch, swap the blue cheese for chopped chives, dill and a pinch of garlic.

Tips for crispy hot wings

  • Dry them. Water is the enemy of crispy skin.
  • Use a rack, so hot air reaches every side.
  • Don't crowd the tray.
  • Sauce at the last minute.

Make ahead for a party

Hot wings are ideal for a crowd because most of the work can be done earlier. Coat the wings in the baking powder mix the night before and leave them uncovered on a rack in the fridge, which dries the skin even more. Make the hot sauce and dip in advance, too. When friends arrive, the wings only need their time in the oven, then a quick toss in the warm sauce. For a big batch, use two trays and swap their shelves halfway so both crisp evenly. Fries on the side

Oven fries and wings can share the oven at 220°C. Put the fries on the shelf below the wings and give them a shake halfway. If you're making proper chips, parboil thick-cut potatoes for 6–8 minutes, drain and rough them up, toss them in a little oil and roast for 35–40 minutes. A sprinkle of salt and smoked paprika as they come out ties them in with the wings.
