Fillet steak with blue cheese sauce is the British steak-night treat when you want a soft centre fillet and a sharp, creamy blue cheese gravy. Pan-sear Fillet Steak 2x 6oz, rest it, then whisk the sauce in the same pan. Shop Fillet Steaks and Buy Steaks Online for butcher fillet ready for the pan.

Ingredients
- 2 fillet steaks (about 6oz / 170g each)
- 1 tbsp oil; salt and black pepper; knob of butter
- Blue cheese sauce: 100g blue cheese (Stilton or similar), crumbled; 100ml double cream; 1 small shallot finely chopped; splash of white wine or stock
- Chips, watercress or green salad to serve
Method
- Bring steaks to room temperature; pat dry and season with salt and pepper.
- Heat a heavy pan until smoking. Oil lightly and sear fillet 2–2½ minutes per side for medium-rare (adjust to thickness). Add butter for the last 30 seconds and baste. Rest 5 minutes under foil.
- In the same pan, soften shallot. Splash in wine or stock and bubble 30 seconds. Stir in cream, then blue cheese until melted and smooth. Season — blue cheese is salty, so taste first.
- Spoon blue cheese sauce over the rested fillet.
- Serve fillet steak with blue cheese sauce and chips — proper British steak house at home.
