Ingredients
- 4 pork loin steaks (about 135g each)
- 1 tbsp oil; 15g butter; salt and pepper
- 2 eating apples, peeled and diced; 1 tsp sugar; squeeze of lemon
- A splash of cider or water for the sauce
- Sage leaves (optional); mash or new potatoes to serve
Method
- Simmer apples with sugar, lemon and a splash of cider/water until soft; mash lightly for chunky sauce. Keep warm.
- Pat pork dry and season. Heat oil in a heavy pan until hot.
- Fry steaks 3–4 minutes each side until golden and cooked through (63°C+ in the centre). Add butter and sage to baste at the end.
- Rest 3 minutes under foil.
- Serve with apple sauce and mash or new potatoes — spoon pan juices over the pork.
