Ingredients
- 2 × 8oz gammon steaks
- 2 tbsp clear honey; 1 tbsp wholegrain mustard; 1 tsp Dijon
- A splash of orange juice or cider vinegar
- Oil for the pan; black pepper
- Chips, peas and a fried egg (optional) to serve
Method
- Mix honey, mustards and orange juice/vinegar into a glaze. Pat gammon dry and snip the rind in a few places so it doesn’t curl.
- Heat a grill pan or frying pan with a little oil until hot.
- Cook steaks 3–4 minutes each side, brushing with glaze in the last 2 minutes so it sticky-caramelises.
- Rest 2 minutes. Spoon leftover glaze over.
- Serve with chips and peas — or add a fried egg for a pub-style plate.
