Slow cooker beef stew with diced beef is the British set-and-forget supper when you want tender cubes, root veg and a rich gravy waiting when you get in. Ingredients
- 800g–1.2kg diced beef (2–3 packs of 400g)
- 2 onions, 3 carrots, 2 celery sticks, 400g potatoes — all chunked
- 1 tbsp oil; 2 tbsp flour; 600ml beef stock; 1 tbsp tomato puree; 1 tsp Worcester sauce; bay leaf; salt and pepper
- Mash or crusty bread to serve
Method
- Optional: toss diced beef in flour, salt and pepper; brown in oil in batches.
- Tip beef, veg, puree, Worcester, bay and stock into the slow cooker. Stir.
- Cook on low 7–8 hours (or high 4–5 hours) until beef is fork-tender and gravy is rich. Season.
- Thicken with a cornflour slurry on high for 15 minutes if needed.
- Serve slow cooker beef stew with diced beef and mash — proper British comfort.
