Ingredients
- 500g dry-aged smashed burger beef mince (from 1kg pack)
- Salt; 4 soft burger buns; cheese slices; pickles; ketchup/mustard
- 1kg potatoes for chips; oil; salt
- Optional: sliced onion; butter for toasting buns
Method
- Cut potatoes into chips, toss in oil and salt, roast at 200°C fan for 35–45 minutes until golden.
- Divide mince into 8 loose balls (about 60g). Do not overwork.
- Heat a heavy pan or flat plate until smoking. Place a ball, smash thin with a spatula, season with salt. Cook 1–2 minutes until a deep crust forms; flip, add cheese, cook 30–60 seconds.
- Toast buns. Stack double smash patties with pickles and sauce.
- Serve smash burgers with chips — crispy edges, juicy middle, proper British burger night.
