A whole beef fillet is the lean roast for even pink slices and almost no waste. Fresh Whole Beef Fillet 1.2-1.8kg is a fresh 1.2–1.8kg fillet; Whole Beef Fillet 1.2-1.8kg (Frozen) is the frozen twin for the freezer plan. Both live in whole beef fillet and beef joints.

Oven roast
Bring the joint toward room temperature. Trim silver skin if it is still on, tuck the thin tail under, and tie every 4cm so the cylinder cooks evenly. Sear all sides in a hot pan with a little oil — about 60–90 seconds a face — then roast at 200°C. As a guide after the sear: rare around 15–18 minutes per kg, medium-rare around 20–22, aiming for 50–52°C rare or 55–57°C medium-rare before resting. Rest 15 to 20 minutes under loose foil; carryover adds a few degrees. Slice thick with a sharp knife.
BBQ and leftovers
BBQ: sear, then indirect until the probe hits target. Do not treat the whole fillet like a thin steak end to end or the tail overcooks — the tie and tuck matter. Leftover cold fillet is better than a microwave reboot; or cut thick steaks and flash 30 seconds a side in a hot pan. For night-of individual steaks instead of a joint, use fillet steaks.
What to serve
Peppercorn sauce, horseradish, watercress, roast potatoes. A 1.5kg fillet feeds six to eight as a roast. Compare fillet with sirloin and topside on beef joints for roasting when you are balancing budget against tenderness.
