Whole fillet has a glamour that 6oz packs do not. It is also a different piece of work. Fresh Whole Beef Fillet 1.2-1.8kg is a 1.2–1.8kg muscle you roast as a joint or slice into steaks yourself. Fillet Steak 2x 6oz is Tuesday for two if you like lean tenderness. Whole beef fillet is the collection for the first job. Fillet steaks is the collection for the second. Mixing them up is how people panic-roast a joint at 9pm.
The 2x pack
Hot pan, two minutes-ish a side depending on height, probe 50–52°C, rest. That is the 6oz fillet. It is not a sharing board. It is not a buffet. If you need four fillets, buy two 2x packs or look for a larger count, but do not buy a whole fillet and try to cut four even steaks at 6pm with a blunt knife and guests in the hallway.
The whole fillet
Trim the chain if it is still on, season, roast hot then more gentle, or reverse-sear: low oven to 48°C in the centre, then a fierce pan to colour. Rest 15 minutes. Slice thick. It will feed 4–6 depending on the weight and the sides. Leftover cold fillet is one of the few leftovers people fight over. Freeze steaks you cut yourself, separated by paper, if you went the DIY route.
If you wanted to learn steak, start with the 2x. If you wanted a centrepiece, the whole fillet is honest. What is not honest is buying the whole one because it looked more serious, then overcooking it because you have never roasted fillet, then deciding fillet is dry. The cut was not dry. The plan was.
Money
Whole fillet is a lot of money in one click. That can still be a saving versus restaurant fillet for a table. It is not a saving versus rump for a week of dinners. Buy it for the meal it is. Buy 6oz packs for the meals they are. Fillet is a poor everyday protein and a fine occasion plate. Both statements can be true in the same shop.
A probe is not optional on whole fillet. There is no fat to hide a guess. If you will not use a probe, buy sirloin and enjoy your life. If you will, the whole fillet is one of the cleanest roasts we pack, and the 2x 6oz is one of the cleanest steak dinners. Pick the job, then pick the pack.
Match the pan to the pack: a wide pan for many pieces, a small pan for two steaks. Crowding is the quiet way to steam meat you paid to fry. Give it space, give it a rest, and the cook you meant will show up on the plate. That is as true of Whole Fillet or 6oz Fillet Packs as of any other pack we send out of the cutting room.
