Ingredients
- 2 sirloin steaks (8oz / ~225g each)
- 1 tbsp oil
- 40g butter
- 2 garlic cloves, crushed
- A few thyme sprigs
- Salt and black pepper
Method
- Bring steaks to room temperature. Pat dry, oil lightly, season generously.
- Heat a heavy pan until smoking hot. Sear sirloin 2–3 minutes a side for medium-rare (thicker steaks need longer).
- Lower the heat, add butter, garlic and thyme. Tilt the pan and baste for 1 minute.
- Rest 5 minutes under foil. Spoon over the foaming garlic butter to serve.
- Chips, salad or grilled mushrooms on the side — keep the plate simple.
