Ingredients
- 4 pork loin steaks (about 135g each)
- 1 tbsp oil; 15g butter; salt and pepper
- 1 eating apple, sliced; 150ml dry cider; 100ml chicken or pork stock; 1 tsp wholegrain mustard (optional)
- Mash or new potatoes and greens to serve
Method
- Season pork. Heat oil in a pan and fry steaks 3–4 minutes per side until cooked through (75°C). Rest under foil.
- Add butter to the pan; fry apple slices 2 minutes until golden.
- Pour in cider; bubble to reduce by half. Add stock and mustard; simmer to a light gravy.
- Return pork to the pan to coat; warm through 1 minute.
- Serve pork loin steaks with cider and apple over mash or new potatoes — sweet, sharp British midweek.
