Ingredients
- 2 sirloin steaks (about 8oz / 227g each)
- 1 tbsp oil; salt and black pepper
- Garlic herb butter: 60g soft butter, 1 garlic clove crushed, 1 tbsp chopped parsley, pinch of salt
- Chips and watercress or salad to serve
Method
- Mix garlic herb butter; roll in cling film and chill. Bring steaks to room temperature; pat dry and season with salt.
- Heat a heavy pan until smoking. Oil lightly and sear sirloin 2–3 minutes per side for medium-rare (adjust to thickness). Rest 5 minutes under foil.
- Meanwhile cook chips until golden (oven 200°C fan, 35–45 minutes, or deep-fry).
- Slice a disc of garlic herb butter onto each hot steak so it melts.
- Serve sirloin steak with chips and garlic herb butter — proper British steak house at home.
