Frozen steak is not a different cut. It is steak that has been frozen properly, and the cook is the same once it is defrosted and dry. The mistake is cooking a frozen block in a pan and serving a grey outside with a cold centre. Sirloin Steaks 900g-1.1kg (Frozen) is a frozen family pack. Defrost, then cook as usual
Fridge overnight, on a tray to catch drip. Pat dry, then salt, then a hot pan: 2 minutes a side for a 6oz-class sirloin to medium-rare, rest 5 minutes. If the steaks in the 900g–1.1kg pack are uneven, probe the thickest. Do not microwave-defrost a steak; you will start cooking the edges. Cold-water bag, sealed, is the rush method, 45 to 60 minutes, still dry before the pan. Shop sirloin steaks for chilled 2x and 6x packs when you do not want to wait on a defrost.
Tomahawk and joints from frozen
Tomahawk Steak 900g-1.2kg (Frozen) is a different shape: defrost 24 hours, then sear and finish in the oven at 180°C until 52°C, rest 10 minutes. A frozen sirloin joint from the same freezer world is a roast, not a pan steak — defrost fully, then the joint times. Never try to reverse-sear a rock-solid tomahawk; the outside will be cooked before the bone-side has thawed.
Cooking from frozen in a pinch
If you must start from frozen, oven 120°C until a probe shows 10°C in the centre, then a hot pan to crust, then rest. It works. It is not as good as a fridge defrost. Air fryer from frozen: 180°C, 8 minutes, then 200°C to colour, probe, rest — better than a microwave, worse than planning. Shop beef steaks for the chilled steaks you will actually cook tonight, and keep the frozen packs for the nights you remembered to defrost at breakfast. Frozen steak that has been dried well will still crust. Wet steak will not.
The 900g–1.1kg frozen sirloin pack is a family steak night if you defrosted at breakfast. The 1.8–2.2kg frozen pack is a fortnight of steaks if you portion it as it thaws and refreeze what you will not cook in two days — or cook the lot and eat leftovers cold. What it is not is a 6pm surprise. Frozen steak rewards a note on the fridge door.
Defrost, dry, hot pan, rest. That is frozen sirloin, and it is why a freezer pack is a plan, not a panic button, if you give it the night before.
